But to be honest I dont even do this any more. I'm talking about maybe a 1/4- 1/2 C to nearly a 24 oz batch. I've added Apple Cider vinegar to my injections before to help with tenderizing, however it's far from 1/2 of my injection. I have cooked many recipes with apple cider vinegar and never had that smell. When I went to slice them they were both moist but a got a hint of smell like the meat was spoiled from both, I ate about three bites from both, and tasted ok but not great like others I have smoked, the smell had me worried so I had my wife do the smell test and that was no help, she couldn’t say either way and refused to eat it. At 175 degrees I dab my home made BBQ sauce and at 195 degrees I pulled them out to rest for 45 minutes. I didn’t mop them every hour like I have done before because I read many don’t, I didn’t foil them at 160 degrees cause I never do and they always come out moist in this pit. Next morning I rinse them off and dried them with paper towels, after a thick dry rub that I have used before, they went into my preheated smoker at 225. in each brisket then place them in the refrigerator overnight. I read somewhere about apple cider injection so this past Saturday I join Costco Shopping Club and pickup two briskets and when I got home I injected them with half apple juice and half apple cider vinegar about 10 oz. I have spend about an hour or so every night I’m home reading different BBQ forums throughout the internet. I have injected about 20 briskets so far, some with root beer, cherry coke and coke and Jim beam, which is my favorite after dinner drink. Last January I purchase a homemade offset vertical smoker and began to learn the art of making brisket, the right injection, rub, and wood. I've cooked 100's of briskets,never used or heard about injecting with Apple juice or vinegar. I have cooked many recipes with apple cider vinegar and never had. apple cider vinegar has the capacity to break down fat cells. It's very simple to pass a drug test, by simply using vinegar available at your home. Dude, DO NOT use apple cider vinegar to break it down! That shit is sooo dirty.
